Paleo and Keto Overnight Meat Marinade: Savory Herb

I meal prep 3-4 times a week with my Instant Pot so I’ve perfected my marinade recipe Most people following a keto and/or paleo diet, myself included, rely heavily on meat to anchor their diets. When you’re cutting down carbs and processed food, but still around people eating standard American diets, you have to make the best of every potluck or buffet situation.

A good marinade is a science, a math equation and a little magic. We’ll get to the Savory Herb recipe I posted on Instagram, but let’s talk about the ratios of a good paleo / keto marinade:

The Basics

1 cup chopped veggies
1-2 lbs meat of your choice
1/4 cup oil – try ghee, olive oil, coconut oil
4 TBSP of the seasonings of your choice
1 TBSP of my secret ingredient – coconut aminos
2 cups broth of your choice

Mix dry seasonings + oil together in a metal or wooden bowl. Put your meat and veggie in a bowl with a lid and add the broth. Mix in your seasonings + oil creation. Refrigerate for up to 24 hour.

My Savory Herb Marinade:

1 cup chopped veggies
1-2 lbs pork tenderloin
1/4 cup oil – olive oil
1 TBSP seasoning salt
1/2 TBSP Garlic Salt
1/2 TBSP Chopped Dry Onion
1 TBSP Italian Seasoning
1 TBSP coconut aminos
2 cups broth of your choice
